Scones

Ingredients:

  • 1 2/3 cups Hijo Superfoods Banana Flour
  • 3/4 cups glutinous rice flour
  • 1/2 cup refined sugar
  • 2 1/2 tsp baking powder
  • 1/3 cup full cream milk
  • 1/2 tsp salt
  • 3 1/2 tbsp butter
  • 1 large egg
  • 1/8 tsp baking soda

Procedure:

1. Preheat oven to 175 °C

2. Mix the banana flour, glutinous rice flour, baking powder, baking soda, salt. Use a big mixing bowl because you want lots of room for the mixing process

3. Cut in the frozen butter with a pastry cutter or 2 forks. To avoid overly dense scones, work the dough as little as possible. Messy and crumbly is a good thing

4. Whisk together the sugar, full cream milk, and egg.

5. Mix the wet and dry ingredients just until combined, then pour out onto the counter

6. Sprinkle some flour into your work surface, hands, and on top of the dough. Tip and fold the dough over 2-3 times until it is a little smoother

7. Pat into round shapes, about 4 cm deep. Take a 5 cm, smooth-edged cutter and dip it into some flour.

8. Plunge into the dough then repeat until you have five to seven scones.

9. Brush the top of the scones with a beaten egg, then carefully arrange on your baking sheet.

10. Bake for 25 minutes until risen and golden on top
