Gluten-Free Banana Flour Pancakes


  • 1 cup Hijo Superfoods Banana Flour
  • 1/3 cup Hijo Superfoods Coconut Sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 cup fresh milk
  • 2 large eggs
  • 2 tsp vegetable oil
  • 2 tsp vanilla extract


1. Mix the flour, baking powder, salt together until well combined.

2. In a separate bowl, stir the milk, sugar, and vanilla extract.

3. Beat the eggs in a separate bowl.

4. Combine the dry ingredients, egg and milk.

5. For fluffy and dense pancakes, batter should be thick and lumpy. For thinner and lighter pancakes, batter should be smooth and completely mixed.

6. Grease the non-stick pan with butter and set to low heat.

7. Cook the pancakes for 2-3 minutes on each side or until bubbles form and edges are cooked.

8. Serve with butter, your choice of fresh fruit, and maple syrup.
